I mentioned a few days ago that I was going to make a dish that I have a lot for breakfast in the mornings. Well, this is it. I got this from the TurboFire workout program. In one of the books that come with the program it has recipes, quite a few recipes that I absolutely love. It's a very light dish, low on calories and has a great taste to it.
The recipe calls for:
1 whole egg plus 2 eggs whites
3 slices (2 oz.) ham (or turkey bacon or turkey sausage), cut in thin strips
1/2 bell pepper, chopped
1 oz. pepper jack cheese (or cheddar, mozzarella, or swiss), shredded
2 scallions chopped
Salt and pepper to taste
Nonstick cooking spray
Scramble the eggs in a bowl. Add ham, bell pepper, scallions, and cheese. Add dash each of salt and pepper (if desired). Spritz microwaveable bowl with nonstick cooking spray and pour in egg mixture. Microwave on medium for about 3 minutes. This time can vary though. I had to cook mine for a little over 4.
You can serve 1 slice of whole wheat toast and 1/2 cup of cranberry juice with it as well.

Beachbody Coach
I've taken on a new job or what I'm hoping will be a new job. I almost didn't take it because I was worried since I'm still overweight that I will be judged, but then I realized...I'm in it for the long haul just as much as everyone else that is signing up. I've got goals and ambitions that I plan on crushing! So...why not be a coach and hope that others will get inspired enough to join me?
That's why I signed up for the Beachbody Challenge. It's a 90 day challenge that I am going to focus my hardest on and do my best! I've got Shakeology now too, so the wheels have been put into motion. I want to be positive and supportive of others while I'm on this 90 day stretch as well.
If some of you don't know what Shakeology is you can check it out in the link I've provided. It's a shake you drink daily and gives you all the vitamins and nutrients needed. This is great for some of us that hate to eat vegetables!

Vegetarian Dish Tonight
For dinner tonight I went all vegetarian. I liked to do that on occasion and venture away from meat. I try to do it a couple nights a week, but I'm sure a lot of us know how hard that can be for meat lovers. I don't need meat, but my husband loves it. I actually went almost a year without consuming it, and I found many different alternatives. Sadly, I've never gone into trying tofu. It's not that I'm afraid of trying it. I'm afraid of cooking it. I've heard so many stories about if you don't know how to cook tofu it won't taste very good. I'm going to go over that bridge soon and give tofu a try. Especially now that I have a huge vegetarian cookbook that my mother-in-law bought me for Christmas.
Onto tonight's dinner - I'd like to tell you all that two of the items on my plate were bought from Sam's Club. One was stuffed shells. These shells are kind of large, so I only eat one, which is the recommended serving size. One shell is 260 calories, which isn't bad. Now, the other item I purchased from Sam's Club is freshly diced butternut squash. The squash is diced and packaged in the refrigerator section - it is not a frozen item. It's completely fresh. I tossed the squash into a dish with a tablespoon or two of water and put it in the microwave for the time it said on the package. After it was done I tossed it into my Ninja blender and voila. I didn't add anything to it. It tastes wonderful! The last item on my plate was just some romaine lettuce and cucumbers. My husband is a very picky eater and loved all of it, so it was a huge success in my household.

I'd like to add that I've been reading Chalene Johnson's book called PUSH. She speaks about organizing your refrigerator and cupboards. I'm slowly getting myself into this. The cucumber I bought was rather huge, so I diced up the whole thing and tossed it into a clear plastic container then refrigerated it. It was a quick and easy. It's one last step I have to take to make the next salad.
